Well, yes and no. While coffee roasted straight out of the roaster is drinkable, it may not be very enjoyable. This is due to the buildup of CO2 in the coffee beans that happens during the roast.

Therefore we recommend to wait 4-5 days after the roast date before you drink it. Some coffee might even not peak until 14days after roast.

Runway Roasters recommend to use the coffee before 3months after roast date, to keep and preserve flavour and intensity.
